Menu Plan Monday – September 8th
I do not like not having a menu plan. When life is chaotic, unpredictable, and full, the last thing I want to think about on the fly is dinner.
Last week, I failed to make a menu plan and when things got crazy, ordering carry-out was my go to.
Accept grace. Move on.
This week I’m starting fresh, walking in new mercies, and making a plan for my family. Since our breakfast and lunch is pretty much the same from week to week, I’m just going to share our dinner plan for the week. If you’re interested, you can see our regular breakfast and lunch menu plans here.
We bought a quarter cow several months ago along with chicken and fish in bulk. We ran out of most all of our chicken and our fish stores are low. Since we have a huge road trip coming up, I want to scrimp and save wherever I can before we leave. This means our week is going to be heavy on the beef because it’s what I have on hand. I’m thinking of this week as an eat from the pantry (and freezer) sort of challenge.
Menu Plan
Monday: Roast with Potatoes, Carrots, and Green Beans
Tuesday: Meatloaf with mashed potatoes and carrots
Wednesday: Quinoa Enchilada Casserole with avocado and tomatoes (hopefully from our garden!)
Thursday: Pan-Seared Lemon Rosemary Chicken {recipe from 20 Minute Meals} with sauteed zucchini and squash
Friday: Pan-Seared Turkey Burgers {experiment for the 2nd edition of 20 Minute Meals!} with sweet potato fries and sauteed greens
Saturday: Family Night! Prime Rib with baked potatoes and salad and Ice Cream Sundaes for dessert. We’re doing an Ice Cream Social at home. 😉
Sunday: Breakfast for dinner or Leftovers
