Quick and easy meal ideas for an exhausting week.

Posting my menu plans here for all the world to see has truly been such a help in keeping me faithful to menu planning. I ride such a roller coaster when it comes to meal planning, but it’s without a doubt one of the best things I do for my family. Our days go so much more smoothly when dinner is already planned.

We are in an exhausting season of life right now. I’m not sure why it’s so exhausting, but it is. Therefore, I’m purposing to keep our meals simple and my trips to the grocery store minimal. This means I’m using what’s in my freezer, which is mostly beef since we bought a quarter cow a few months ago. You can bet I’m not spending more than 20 minutes preparing meals most days of the week right now.

Here’s our plan for this week!

Menu Plan Monday

Monday: Pan-Seared Lemon Rosemary Chicken {recipe from 20 Minute Meals} with sauteed zucchini and squash

Tuesday: Meatballs and Gravy {recipe will be in the second edition of 20 Minute Meals} with green beans and potatoes

Wednesday: Quinoa Enchilada Casserole with avocado and tomatoes

Thursday: Turkey Vegetable Soup in the Crockpot {this recipe but with turkey meat}

Friday: Simple Spaghetti and salad

Saturday:  Family Night! Sloppy Joes {recipe from 20 Minute Meals} with sweet potato fries and fresh veggies

Sunday: Breakfast for dinner or Leftovers
