Menu Plan Monday: 1/18 – 1/24
Welcome to another week! I can’t believe it’s the next to last week in January already. This month is just flying by. Mark and I have a pretty busy week this week, which makes menu planning essential for us.
Here is what we’ve got on the schedule for the week.
Monday:
• Breakfast – Oatmeal w/ brown sugar & walnuts, apples, craisins
• Lunch – Broccoli Soup w/ english muffins
• Dinner – Slow Cooker Brown Sugar Pork Loin w/ sweet potatoes, green peas
• Snack – flaxseed crackers w/ hummus, almonds, carrot sticks
Tuesday:
• Breakfast – Blueberry Waffles w/ syrup & walnuts, grapefruit
• Lunch – LA – lunch w/ friend, Mark – business lunch
• Dinner – Poppyseed chicken, mashed potatoes, green beans & salad
• Snack – apples w/ peanut butter, carrot sticks, raw broccoli
Wednesday:
• Breakfast – Scrambled eggs cooked in coconut oil, toasted sprouted bread w/ coconut oil, mangoes
• Lunch – Bean Soup & salad
• Dinner – Care Group – leftovers
• Snack – red & yellow peppers, apples w/ peanut butter
Thursday:
• Breakfast – Breakfast w/ friends
• Lunch – Roast Beef Sandwich, salad, & kettle chips
• Dinner – Southwest Bean & Seed Burger (this is a new recipe that we wanted to try) on sprouted buns, fried plantains, salad
• Snack – broccoli, almonds, banana
Friday:
• Breakfast – Waffles w/ syrup & walnuts, kiwi
• Lunch – Bean Soup & salad
• Dinner – Raintree Pizza & Game Night
• Snack – broccoli, carrots, apple
Saturday:
• Breakfast – Knoxville’s Best Bagels
• Lunch – Roast Beef Sandwich, raw veggies, Kettle chips
• Dinner – Date Night – dinner out
Sunday:
• Breakfast – Sausage Biscuit
• Lunch – Grilled Chicken Salad
• Dinner – Saucy Baked Pork Chops, mashed potatoes, salad
