Favorite Fall Freezer Recipe: Mexican Chicken Chili

It’s my favorite time of the year again: Fall!
The leaves are changing color, the weather is getting cooler, and all the yummy food comes out. I get to make scones, muffins, bread, anything pumpkin, and cozy dinners.
But this time of year can also encourage us to eat way too much and cause us to gain weight (a not-so-fun part about the holidays).
That’s why I love to find healthy (yet yummy and hearty) meals for the fall time. We can splurge on a few scones during the day if our dinner is healthy. 😉
Add to that a freezer cooking meal, and this is my favorite fall recipe!
Freezer Crockpot Mexican Chicken Chili
Ingredients:
1 shredded rotisserie chicken or 3 cups shredded chicken breasts
2 cups black beans (or 1 15oz can)
2 cups pinto beans (or 1 15oz can)
1 cup frozen corn
2-4 chopped zucchini (I LOVE zucchini so I put a ton in)
5 cups chicken broth
2 cups chunky salsa (mild or hot depending on taste)
1 8oz can tomato sauce
Directions:
Combine ingredients in the crock pot and cook for 7-8 hours on low.
If you want to make this ahead of time, simply combine all ingredients into a gallon freezer bag. When you are ready to cook it, thaw it in the fridge, throw it in the crock pot, and cook for 7-8 hours on low!

While it’s not fall in my part of the world(Spring in New Zealand) I am always looking for great recipes so will be trying this one out. Sounds lovely!

Do the beans need to be cooked first?
I always add cooked beans. If you add uncooked beans then it might take longer and require more water.
