20 Minute Meal: Shrimp Scampi

So far I have shared Pan-Seared Curried Cod, Simple Spaghetti, and Pork Diane. Today, I’m sharing another family favorite 20 Minute Meal Shrimp Scampi. This recipe I married into!
Shrimp Scampi Pasta
Ingredients:
- 1-2 lbs medium shrimp, peeled
- 8 ounces linguine or spaghetti noodles
- 1 cup butter
- 4 cloves garlic, chopped
- 1 bunch green onions, chopped
- 1/3 cup white wine (or chicken broth)
- Juice of 2 lemons
- 1 Tablespoon of parsley
- Salt and pepper, to taste
Method:
Cook pasta according to package instructions; drain. Melt butter in a large skillet over medium heat. Add garlic and green onions; turn heat up to medium-high and cook 3 minutes. Add shrimp, cook 3-5 minutes, or until pink. Add wine (or chicken broth) and remaining ingredients. Simmer while pasta finishes cooking. Pour shrimp mixture over pasta, stir to blend. Serve immediately.

I made this last night for supper and it was so super yummy! Shrimp Scampi is one of my favorite shrimp dishes. I’m from South Louisiana and this is one of those dishes that just have to be apart of a Louisiana household! Thanks for sharing – this was excellent!
