20 Minute Meal: Pan-Seared Curried Cod
Last week, I released my eBook, 20 Minute Meals: Giving Weary Chefs Grace While Keeping Families Healthy.
This week, as part of a 5 Days of Mothering and Homemaking Series, I thought it would be fun to share with you five more of my favorite 20 Minute Meals! Each day this week, I will be sharing with you great summertime meals that will only take you 20 minutes to prepare.
First up, Pan-Seared Curried Cod!
Pan-Seared Curried Cod
Ingredients:
- 4 cod fillets
- 3 Tablespoons curry powder
- Salt & pepper, to taste
- 2-4 green onions, chopped
- 1/2 teaspoon ginger
- 1 Tablespoon soy sauce
- 1 teaspoon chili powder
- 1.5 Tablespoons olive oil + 1 Tablespoon butter
- 1 bunch of cilantro
- Juice from 1/2 a lime
- Sour cream or plain yogurt, to taste
Method:
Mix all seasonings on a plate. Roll cod filets in mixture until well coated.
Heat olive oil and butter in a large skillet over medium-high heat. Lay your fillets in your pan. Add soy sauce and green onions to the pan with the fish.
Cook fillets 2-3 minutes on each side while continually spooning oil and butter over the fillets. You will cook the fish until it begins to flake.
Serve curried cod with a spoonful of yogurt and cilantro to garnish. Don’t forget to squeeze fresh lime juice over your fish. Serve with summer greens.

Ahhh, I wish my husband liked curry! This sounds amazing! I love how quickly fish cooks up, and how easy it is, too. Great recipe.
You could probably do this with another seasoning like Cajun seasoning or a blend of cumin and chili powder. Does he like any of those things? This is one of our favorite dishes!
sounds delicious! i plan to try to incorporate more fish into our diet, since we’re living in southeast asia – this sounds like a great one to try.
you didn’t mention when to add the soy sauce, ginger, onion, & chili powder in the instructions – am i correct in assuming they go with the curry before adding them to the pan, or would you add them later in the cooking process? it probably doesn’t make a big difference but i thought i’d ask!
If possible, I would like to know when to add them too. I’m looking forward to making this.
You can do just about anything with the sauce. If you have a few extra minutes, you can put the cod in the mix, cover it and set it aside for a bit to let it marinate. OR you can just add it to the pan when you add the cod. Either works! Just let the cod soak in all the liquidy goodness as long as you can ๐
