20 Minute Meal: Chicken Caesar Wrap

So far I have shared Pan-Seared Curried Cod, Simple Spaghetti, Pork Diane, and Shrimp Scampi Pasta. Today, I’m sharing another family favorite 20 Minute Meal Chicken Caesar Wrap.
Chicken Caesar Wrap
Ingredients:
- 4-6 Tortillas
- 1/2 lb chicken tenders or pre-cooked shredded chicken
- Romaine lettuce, roughly chopped
- 1 tomato, diced
- Croutons
- Bacon bits
- Parmesan cheese
- Creamy Caesar Dressing
- Juice of 1 lemon
- Black olives, optional
- Red onion, diced, optional
Method:
Cut chicken into 1-inch cubes. Heat a medium skillet with some butter or coconut oil over medium-high heat. Cook chicken for 5-7 minutes, or until chicken is cooked throughout. Meanwhile, in a large mixing bowl, combine remaining ingredients and toss in Caesar dressing. Add cooked chicken and toss a few more times to fully coat mixture in dressing. Place in the center of tortilla; wrap up and cut in half. Serve with fresh fruit and raw veggies.
This is great for summer dinners. It’s hearty, but light! I like to cook whole chickens at a time and freeze the chicken in individual meal portions. Then, I can just pull it out to thaw for dinners like these! Added bonus you can make homemade chicken broth and stock for a quarter of the store bought price.
