I have a lot of things on my plate (figuratively speaking), so I’ve not been doing a very good job of putting things on my family’s plates (literally speaking).

I’ve gotten into a deep rut when it comes to menu planning. I’ve been uninspired and…well…lazy.

All too often, I plan boring meals because they seem easy.  Then, I ditch the boring meals for even easier unhealthy meals. And for some reason, I’m surprised when nobody wants to eat dinner. Go figure!

But a couple of weeks ago, I got the bright idea to pull out my crock pot and try to have a delicious meal waiting for my family.  It was a huge hit.  Everyone actually ate it without any complaining!

So, I started thinking that if I would throw things into the crock pot early in the day (before my motivation and energy run out), I might be able to feed my family nourishing foods they’ll enjoy without a ton of extra work.

Yes, I realize this is not a revolutionary idea.  I understand that many of you are already doing this with great success.  I’m just slow to the party (as usual).

Probably the biggest reason I haven’t jumped onto the crock pot bandwagon sooner is that my family isn’t always in love with crock pot recipes. We’re sort of picky when it comes to food quality.  That’s the curse of having a husband who works in the restaurant industry.

Finding crock pot recipes we all like is a challenge. That’s why these recipes made me do a little happy dance.  They look easy and really, really tasty.

I want to eat this food, and I think my family will feel the same way. I think that by using a collection of crock pot recipes like these, I can make easy food that looks and tastes good, and my family will be healthier for it.  It’s a win-win-win!
