Ok, this looks simply incredible. I can’t however have dairy (I know, you know my sob story about that) so MAYBE almond milk? Also can’t have cheese…I will let you know if I come up with a DF version that works!

I never met a soup I didnt love.. They’re the best, especially when you’ve got a foot of snow on the ground. ;)

@KimH a foot of snow is always a great motivator to get some soup simmering!

We shake our bottoms and do “the Bean dance” when we have good soup, so I know what you mean. ;)

Veggie soup is onthe recipe for lunch today, and I have a pot of chicken stock finishing up as we “speak,” so this is excellent timing. Thanks for sharing! We’ll be feasting on this today!

    • http://intentionalbygrace.com Leigh Ann

@Christy, I think doing the bean dance sounds SO.MUCH.MORE.FUN. You’ll have to teach it to me. :-P

Just wanted to say that I tried this recipe tonight and it was GREAT! I love how simple it is! I often have frozen broccoli, corn, and chicken in the freezer, so this is super easy to make when I feel like I don’t have a lot on hand. I also added some white beans and I was thinking if I ever didn’t have any cooked chicken on hand, I could just use white beans. Thanks so much for this recipe! I think it’s going to be a regular around here. :)

    • http://intentionalbygrace.com Leigh Ann

Leanne, I am so glad you enjoyed the soup! After I made this soup, I told my husband at dinner, “You know, I should have totally added beans to this and dropped the chicken.” I might have update this post to give that as an option, huh? :) At any rate, thanks for letting me know you enjoyed it. Sometimes I wonder if people like what I post. ha!

  • Brandi

Any idea the calorie content on this? I know it is wholesome, but my hubby is concerned about the portion sizes and calories.

    • http://intentionalbygrace.com Leigh Ann

That’s a good question. Unfortunately, I do not know the answer. :-/ it goes against the grain, but we don’t count. We just make sure what we take in are unprocessed, fresh ingredients. I would say just be sure to use whole milk and full fat butter (not margarine) and you can eat as much of this soup as you would like. :-) I promise!
